We started in 2019 making one sauce for a restaurant that kept running out of it. The recipe has not changed. The batch size has, twice, and both times because we ran out before Friday rather than because we wanted to grow.
We buy peppers from two farms in Cumberland County and we name them on the label, because a label that says "locally sourced" and nothing else is telling you nothing. When a crop fails we say so on the product page and the run is short that month.
